Bay scallop linguine Diablo!...sweet bay scallops atop a delicious spicy homemade pomodoro tomato sauce with fresh herbs, top with a crispy buttery parmesan and parsley bread crumb. Served with a wild green salad

Thai Chicken Peanut Noodles with Snow Peas, Sriracha, and Sesame .... fresh ginger, garlic, soy, peanut butter, and scallions. Toss w/ noodles, mini peppers, snow peas, and tender shredded chicken

Grilled Wild Salmon with citrus butter dill sauce served with seasoned green beans and Rice Pilaf

Grilled steak served with sweet corn and white balsamic coleslaw.

Roasted Cornish game hen served with white balsamic brussel sprout salad and roasted baby potatoes

Herb de Provence pan-roasted pork loin with pan juices served with roasted baby potatoes and roasted baby carrots

 

All vegetables and meats are all organic  ... local farmers and vendors are used as much as possible supporting small farms.  All dressing , stocks and sauces are made from scratch. 

Each menu item is two servings ($40).. a minimum of two menu items must be ordered.( additional servings will be at $20 per serving) ( if you have purchased a gift certificate before this started you will continue to receive your three servings per order) there is a minimum of two menu items for delivery.

Deliveries are Monday Tuesday and Wednesdays and Thursdays between the hours of 2 and 5p.m. . Orders will not be left outside. Please make necessary arrangements.

Also because of the Coronavirus, clients are encouraged to leave a bag outside their door only if they're home for me to put their food in for their safety and protection for all of us, I will text you when I'm on my way and I will text you after the food is put in your bag so you can retrieve. Again someone must be home for this, food will not be left outside. 

Deliveries have a 20% delivery fee.

Covid19 Safety

A message about COVID-19 (CDC) it is not spread through food through safe practices.
During this challenging time, please be assured that I am taking all possible precautions to ensure your safety. I continuously wash my hands and change my gloves, I wear a mask while I am cooking and I'm the only employee preparing. Clients are permitted to leave their own bag outside their door if they're home to ensure safety. 
I am calling this the porch delivery system using your own bags to ensure safety my deliveries will be with gloves and mask I will text you when your delivery is made so you can grab your food and enjoy as usual.
My main concern is your safety and for you to continually eat healthy. 
In the meantime, the below statement has been provided by the CDC:
Coronaviruses are generally thought to be spread from person-to-person through respiratory droplets. Currently there is no evidence to support transmission of COVID-19 associated with food. Before preparing or eating food it is important to always wash your hands with soap and water for 20 seconds for general food safety. Throughout the day wash your hands after blowing your nose, coughing or sneezing, or going to the bathroom.
It may be possible that a person can get COVID-19 by touching a surface or object that has the virus on it and then touching their own mouth, nose, or possibly their eyes, but this is not thought to be the main way the virus spreads.
In general, because of poor survivability of these coronaviruses on surfaces, there is likely very low risk of spread from food products or packaging that are shipped over a period of days or weeks at ambient, refrigerated, or frozen temperatures.

Original due date was Friday but because the world is going through a traumatic time right now, my schedule is very very busy with home delivery and to ensure I get all the products I need, some things now need to be ordered online to overnight ship to me since the stores Distributors and markets are having a hard time keeping up with product.

Safety practices for Covid-19

Safe practices of always been a priority in my chef business.
Before The Covid-19 virus, constant hand-washing, sanitizing, and antibacterial practices on all of my equipment many times a day that I use for cooking have always been present.
 I am in stock of  gloves to wear them on a daily basis. 
My cutting boards are maple which are a natural anti bacterial wood, meaning that Maple naturally combats bacteria ( I thank Gunter Wilhelm for that) along with their lightning line of knives which are antibacterial handles. These products along with constant washing and sanitizing. 
All these practices with extra and precautions will always be taken on a daily basis to ensure safety not only to my family members but to my clients as well which is my main concern.

 Tapa's consists of multi courses but smaller plates you can get the most flavors out of every plate instead of everything being on one.

Each Tapas plate ingredient owns the dish. The main focus is the one main item.

I love exploring different nationalities so menu options are endless for each and every client that comes to me without having to be stuck with a set menu which brings us to this dinner I did on Saturday.

This dinner was completely a Greek Tapas theme

All ingredients each week are hand chosen ..all organic and non-GMO. Oils and butters are only of top-quality including kerrygold and imported  olive oils and organic oils .  No canola or vegetable oils are used.  Only  avocado, grapeseed oil, olive oil, extra virgin olive oil, coconut oils ensure that you get the best quality to stay healthy and happy! Every dish from start to finish is made from scratch.

National Bittersweet Chocolate Day! Chocolate Souffle

Chocolate Souffle

INGREDIENTS

1 tbsp (15 g) butter, melted

4 tsp (20 ml) sugar

FOR BASE:

1 egg yolk

2 oz (56 g) bittersweet chocolate

3 tbsp (45 ml) butter

½ tsp (2.5 ml) vanilla extract

Large pinch of salt

Preheat oven to 400°

Brush each ramekin with the melted butter. Then place the 2 tsp of sugar in each ramekin, covering all sides. Pop in the fridge.

Melt chocolate and butter in a microwavable bowl until melted. Whisk to combine. Then add 1 egg yolk, vanilla and salt. Whisk until combined. Keep on counter at room temperature. If you need to make it more than 1 hour ahead, do so but pop in the fridge until ready to bake

.

Remove ramekins from the fridge and using a large spoon dollop the mixture into each ramekin filling all the way to the top. Smooth off with a spatula so you have a flat consistent top.

Run your thumb along inside of the ramekin, all the way around, creating a little channel around the soufflé. This will allow your soufflés to rise higher in the final baking stages and prevent tops from cracking. Then clean the edges off with a dish towel.

Place soufflés on a cookie sheet and pop in the oven. Bake for just 13-14 mins until soufflés have risen and tops are slightly browned

.
