Memphis in May BBQ competition 2021

It is so good to be back in Memphis to compete with my team alongside of my other barbecue brothers and sisters competing.

This is the mother of all BBQ competitions and is seriously very important to many barbecuers.... all teams mostly got in yesterday and we were there very late setting up and getting everything ready for turn-ins start today

As a team or you can go in by yourself and just do the main category there are different ancillary turn-ins that the team members can participate.

 

There is the sauces, consisting of barbecue, mustard and vinaigrette Style. There is a turkey turn in, wings Seafood, beef, exotic and chicken

 

We have 2 turn ins starting today so today starts a very important day for all of us. Sauce, turkey and wing. Tomorrow is my turn in of seafood and the other categories for ancillary, then the boys will be staying up all night to baby those pork shoulders for our main turn in on Saturday.

Memphis in May BBQ competition

Hello everyone! The time has come if you have been following me on social media , you know that one of the biggest BBQ competition is happening next week which is the Memphis in May BBQ competition. This is my fourth year competing with my team and we are so very excited to finally be able to compete again this year! I am very proud to represent Cleveland Ohio for I don't know many that go from our area to this competition. 

Memphis in May is one of the largest BBQ competitions in the United States it consists of a team that has a main pork category along with ancillary categories that all the teammates participate in and we all come together for the big turn in of the main. Ancillary categories include Wings, Seafood, exotic, turkey, sauces, beef and our t-shirt design! This is a week-long of barbecue turn-ins but also a week-long of an amazing BBQ community that comes together as one big family that I am so proud to be a part of.

My category is seafood which I will be doing bacon-wrapped grilled shrimp for my turn in but I will be going live on social media along with posting many pictures throughout my week so I hope you follow and click the link below for my Facebook business page so you can be there with me socially! 

There will be no deliveries until May 24th week for I will be gone for this competition. 

Don't forget I also will be going live with E & H Ace Hardware and Fat Daddy Meats tomorrow for Cinco de Mayo doing pork belly Tacos on the Traeger grill along with Puerto Rican style soup beans and rice also I will be part of the very first Egg Fest in Kinsman Ohio at Shetlers! I will be there along with twelve other barbecuers with free food samples all done on the Big Green Egg and they will have special deals on the eggs as well for you to kick up your barbecue season!

Bistec encebollado...A delicious Puerto Rican dish of sirloin steak marinated in adobo spices, including turmeric, oregano, black pepper, and garlic. Topped with sauteed onions in steak pan juices. Served with fresh avocado, lime ,  fresh  corn on the cob.

Mexican steak milanesa....Sirloin steak sliced then marinated in a lemon lime and and garlic moho... then breaded and fried serve with salsa verde over a bed of fresh greens consisting of baby spinach , baby potatoes, fresh snap peas, poblano which comes with a cumin and adobo white balsamic vinaigrette.

Tuscan salmon..... a delicious dish a pan fried salmon with a light sauce of fresh basil, spinach, tomatoes, garlic and light cream. ( as always sauce is on the side) served with lightly steamed asparagus and red lentil pasta

Grilled half chicken.(serves 2)... slow cook on the Traeger.... served with bourbon brown sugar baked beans, fresh corn on the cob and my homemade slaw( vinaigrette based)

Smoked Thick cut pork chops! Not a strong Smoky flavor but slow cooked on the Traeger grill to give a nice Smokey essence! Lightly seasoned and served with asparagus and  roasted olive oil potatoes

Pan fried fresh trout steaks.... freshly cut and chopped into beautiful steaks sauteed with a touch of butter with a lemon dill sauce. Served with steamed broccoli and your choice of roasted spaghetti squash or acorn squash ( limited amount avail)

A barbecue event... Thursday March 25th 2021

BBQ events are taken to a whole different level for these are not your typical barbecue events but have that delicious barbecue flavor!

Beef Bourguignonne with Sourdough Toast......From the Burgundy region of France...this delish dish is a stew of meat slowly simmered in hearty red wine along with pearl onions, mushrooms and crisp, cubed bacon. Spooned over sourdough toast( which will of course be separate) served with a chopped salad.

Tuscan salmon..... a delicious dish a pan fried salmon with a light sauce of fresh basil, spinach, tomatoes, garlic and light cream. ( as always sauce is on the side) served with lightly steamed asparagus and red lentil pasta

Pesto Lasagna Rolls.... homemade Bechamel, creamy Ricotta and fresh pesto rolled and baked with melted mozzarella parmesan and Asiago Cheese's served with chopped Romaine salad

Traeger Grilled half chicken.(serves 2)... slow cook on the Traeger.... served with smoked mac and cheese, slaw( vinaigrette based) fresh green beans.

Traeger Smoked pork chops! Not a strong Smoky flavor but slow cooked on the Traeger grill to give a nice Smokey essence! Lightly seasoned and served with grilled asparagus and your choice of roasted olive oil potatoes or olive oil roasted sweet potatoes...( you can substitute roasted squash on this one as well!)

Fresh Pasta al Limone......bright citrusy flavor with fresh parmesan, parsley, fresh ground pepper and thinly sliced green beans. Choice of shrimp or chicken.

Recipe Thyme!

Rigatoni in a cream sauce with fresh tomato spinach and capers with parmesan. Served with Grilled Steak.

1 lb rigatoni

6 Whole garlic cloves , chopped

2 cups baby spinach

1/2 cup of Parmesan cheese

Two packages of cherry tomatoes

Chopped fresh Parsley, Sage , Thyme and Rosemary to equal 1/2 cup... With parsley being 80% of the herbs

2 cups of vegetable stock

One cup of red dry wine

One cup heavy cream

1/4 cup capers ... Empty This amount in a bowl and fill with water to rinse and let it sit until you're ready to use So you take some of that vinegar out of the capers.

4 tablespoons of butter

2/3 lbs skirt steak Seasoned with B&B Infinity rub.

B&B charcoal For grilling

First thing is to season your steak And set aside To make your sauce.

The second thing you're going to do is put your butter in a pan on Medium-high heat

Next throw in your garlic and tomatoes at the same time. Saute everything for approximately 10 minutes Stirring because you do not want your garlic to burn and stick to the bottom.

Next Throw-in that dry red wine to deglaze.

Let this Boil For about 8 to 10 minutes...

Cook out the alcohol

Now throw in your vegetable broth And simmer for another 10 to 15 minutes...stir stir stir!

Stirring is key in this recipe.

Turn the heat down on low And let it cook for an additional 5 to 8 minutes.

Now throw in all of your chopped herbs , And drain the Capers out of the water and put that in as well.

Deer that up and now slowly and I mean slowly Drizzle your heavy cream while stirring Until fully Incorporated in the sauce.

Turn this up to a medium Heat And let it simmer for about 15 minutes to thicken And shut it down. After you shut off your sauce throwing that spinach Give it a stir and leave it alone let the spinach Wilt inside of your sauce do not do this while cooking Or else you over cook your spinach.

Now let's Grill.

Get a nice hot fire and slap that meat right on the grill and cook it to the temperature you like. I myself Like medium to medium rare Depending on the cut of the steak.

Bring your steak in And let it sit for just a second before you slice it

Boil a pan of water to cook your pasta , Drain your pasta Place on a plate And ladle your sauce Over the top . You may need to reheat your sauce a little bit Before you do this .

Now Go and slice your skirt steak against the grain and place the steak on top of your pasta and lastly finish with grated Parmesan and hot pepper seeds if you like a little spice!

All vegetables and meats are all organic  ... local farmers and vendors are used as much as possible supporting small farms.  All dressing , stocks and sauces are made from scratch. If you are on a low-carb diet, or keto you may substitute things like cauliflower rice or vegetable noodles in place of starch.

You also get complimentary dessert with your order for I support small businesses and purchase desserts and give them away to everyone that orders dinners from me. I also let you know where the deserts came from.

Each menu item is two servings ($40).. a minimum of two menu items must be ordered.( additional servings will be at $20 per serving) 

Deliveries are Monday.,Tuesday ,Wednesdays and Thursdays between the hours of 3 and 6p.m. . 

Also because of the Coronavirus, clients are encouraged to leave a bag outside their door only if they're home for me to put their food in for their safety and protection for all of us, I will text you when I'm on my way and I will text you after the food is put in your bag so you can retrieve. Again someone must be home for this, food will not be left outside. 

Deliveries have a 20% delivery fee.

Payments accepted  through venmo, PayPal, cash app. This is a prepaid service. Orders and payments are due no later than Friday.
