Recipe Thyme!

Rigatoni in a cream sauce with fresh tomato spinach and capers with parmesan. Served with Grilled Steak.

1 lb rigatoni

6 Whole garlic cloves , chopped

2 cups baby spinach

1/2 cup of Parmesan cheese

Two packages of cherry tomatoes

Chopped fresh Parsley, Sage , Thyme and Rosemary to equal 1/2 cup... With parsley being 80% of the herbs

2 cups of vegetable stock

One cup of red dry wine

One cup heavy cream

1/4 cup capers ... Empty This amount in a bowl and fill with water to rinse and let it sit until you're ready to use So you take some of that vinegar out of the capers.

4 tablespoons of butter

2/3 lbs skirt steak Seasoned with B&B Infinity rub.

B&B charcoal For grilling

First thing is to season your steak And set aside To make your sauce.

The second thing you're going to do is put your butter in a pan on Medium-high heat

Next throw in your garlic and tomatoes at the same time. Saute everything for approximately 10 minutes Stirring because you do not want your garlic to burn and stick to the bottom.

Next Throw-in that dry red wine to deglaze.

Let this Boil For about 8 to 10 minutes...

Cook out the alcohol

Now throw in your vegetable broth And simmer for another 10 to 15 minutes...stir stir stir!

Stirring is key in this recipe.

Turn the heat down on low And let it cook for an additional 5 to 8 minutes.

Now throw in all of your chopped herbs , And drain the Capers out of the water and put that in as well.

Deer that up and now slowly and I mean slowly Drizzle your heavy cream while stirring Until fully Incorporated in the sauce.

Turn this up to a medium Heat And let it simmer for about 15 minutes to thicken And shut it down. After you shut off your sauce throwing that spinach Give it a stir and leave it alone let the spinach Wilt inside of your sauce do not do this while cooking Or else you over cook your spinach.

Now let's Grill.

Get a nice hot fire and slap that meat right on the grill and cook it to the temperature you like. I myself Like medium to medium rare Depending on the cut of the steak.

Bring your steak in And let it sit for just a second before you slice it

Boil a pan of water to cook your pasta , Drain your pasta Place on a plate And ladle your sauce Over the top . You may need to reheat your sauce a little bit Before you do this .

Now Go and slice your skirt steak against the grain and place the steak on top of your pasta and lastly finish with grated Parmesan and hot pepper seeds if you like a little spice!

Thanksgiving recipe, Guinness gravy

GUINNESS GRAVY RECIPE:
Ingredients
• 2 Tablespoons of Butter or Margarine 
... • 1 Tablespoon of mustard 
• 1 Tablespoon of Thyme, Rosemary or Sage 
• 1 1/2 cups Chicken Stock. 
• 1 large onion 
• 1 Tablespoon of flour (or 1/2 tablespoon of corn flour) 
• 1 cup of Guinness 
• Salt and Pepper
Cooking Instructions:
• Melt butter on a low heat. 
• Fry onions until slightly translucent - being careful not to burn. 
• Add thyme, rosemary or sage. 
• Mix in the mustard. 
• Slowly pour in the stock and Guinness, stirring - save a little stock to add to the flour below. 
• Mix the flour, or corn flour with a little bit of water to form a paste - add the remaining stock and stir thoroughly. (I find that corn flour is far easier to use as it mixes with the water quickly and easily) - if you like a thicker gravy add more flour or corn flour. 
• Bring the gravy to a boil and then slowly add the flour mix, stirring constantly. 
• Simmer for a few minutes until the gravy thickens 
• Add salt and pepper to taste. 
• Serve straight away.
Note, preparing the above way may make the gravy a little bitter - either reduce the amount of Guinness, or add the Guinness to the onions when frying to reduce the volume and bitterness.
Serving Suggestions:
• Pour generously over your cooked turkey slices.
• Serve with mashed or boiled potatoes, red or white meat and a vegetable. 
• Take some leftover meat and add to gravy - serve over hot crusty bread.

Angus Roast Beef Plate... sliced roast beef served with Au Jus, sauteed green beans and your choice of whipped sweet potatoes or whipped butter potatoes

 

 

All vegetables and meats are all organic  ... local farmers and vendors are used as much as possible supporting small farms.  All dressing , stocks and sauces are made from scratch. If you are on a low-carb diet, or keto you may substitute things like cauliflower rice or vegetable noodles in place of starch.
You also get complimentary dessert with your order for I support small businesses and purchase desserts and give them away to everyone that orders dinners from me. 
Each menu item is two servings ($40).. a minimum of two menu items must be ordered.( additional servings will be at $20 per serving) 
Deliveries are Monday.,Tuesday ,Wednesdays and Thursdays between the hours of 3 and 6p.m. . 
Also because of the Coronavirus, clients are encouraged to leave a bag outside their door only if they're home for me to put their food in for their safety and protection for all of us, I will text you when I'm on my way and I will text you after the food is put in your bag so you can retrieve. Again someone must be home for this, food will not be left outside. 
Deliveries have a 20% delivery fee.
Payments accepted  through venmo, PayPal, cash app. This is a prepaid service. Orders and payments are due no later than Friday.

 

Recipe! Peach pepper bourbon glazed pork tenderloin

 

Grilled pork loin with a Bourbon Peach pepper glaze.

One package of pork tenderloin, there's always two in a pack

B&B Charcoal Trinity rub

2 tablespoons of pureed garlic

3 tablespoons of pork fat melted, or vegetable oil

For the sauce...

For more photos 1/4 cup of Knob Creek Maple smoked bourbon

One half of a finely chopped Vidalia onion

One tablespoon of B&B Charcoal Swine Shaker rub

2 tbsp  butter

One heaping teaspoon of fresh honey

1/2 cup of peach pepper Jam or peach jam ( if you can't find Peach pepper Jam then chop up a quarter cup of red peppers and you will saute the peppers with the onions)

Now pour yourself a nice glass of that bourbon and let's get started

Generously season your pork loin with the Trinity rub on all sides, then mix your pureed garlic with the oil or fat and pour that over your pork loin, rub it in! Set that aside and let's go like that Grill while we make the sauce that way it's ready to go when the sauce is done.

Now that your grill has been lit...

Throw your butter in a pan on medium-high heat and sauteed onions until they caramelize.

Next throw in your peach jam and melt it in stirring constantly, then you're honey and your seasoning.

Cook this for just a few minutes till all the ingredients are married together.

Now let's get that bourbon in there!

If you are a Seasoned Chef like that on fire and let it burn out and continue to cook for about 10 minutes to 12 minutes.... if not don't hurt yourself, let the bourbon cook down for about 12 to 15 minutes and then turn the heat off.

Now let's grill...

Pork tenderloin grills pretty quickly, this is the filet mignon of your swine.

Grill on every side until your pork tenderloin reaches 145 degrees. If you purchased a good quality tenderloin like Berkshire pork or a trusted farmer organic pork you can pull it off at 140.. more of a medium temperature.

Next slice it up on a plate over right with some nice vegetables or roasted baby potatoes! Pour that sauce all over your pork and enjoy... you should be on your second glass at least of bourbon by now. Cheers!
