Oils and butters are only of top-quality including kerrygold and imported  olive oils and organic oils .  No canola or vegetable oils are used.  Only  avocado, grapeseed oil, olive oil, extra virgin olive oil, coconut oils ensure that you get the best quality to stay healthy and happy! Every dish from start to finish is made from scratch.

Soup of the Week ...

Escarole Italian Soup

Warm up with this delicious nutrient-rich soup ! Delicious and Rich free range chicken stock seasoned and tossed with fresh escarole carrot and garbanzo bean.

 

Organic chicken pot pies are back! Served with Artesian side salad

 

Grilled mahi mahi with pineapple salsa served with coconut rice 

 

Chicken alfredo pasta with artesian salad

Brown Butter Orecchiette with Spicy Sausage and Peas, spring salad with tomatoes and white balsamic vinaigrette

 

Steak Milanese or Grilled Steak with Snap Pea, Radish, and Arugula Salad And roasted baby potatoes

Pollo con Crema.... chicken breasts with roasted poblano chile in a cheesy creamy sauce. Served with your choice of white rice or brown rice and black beans.

 

Don't forget but if you need a simpler menu for your diet , you can just tell me that you would like either simply prepared baked / sauteed / grilled chicken fish or pork or seafood with your choice of two sides ...it can be two vegetables or a starch and a vegetable but very simply prepared with olive oil, hemp oil, avocado oil, coconut oil. Butter will not be used. Only light seasonings will be used.

It is $20 per serving with three servings per menu item for a total of $60 per menu item listed. ( each serving will be well over 12 oz of protein per serving and could go up to 16 ounces per serving. When my Farmers give me special pricing I pass it to you and give you more)

Deliveries are Monday through Thursday, depending on your area. Food will not be left outside so I must have access to place in your refrigerator or someone must be home.

National Bittersweet Chocolate Day! Chocolate Souffle

Chocolate Souffle

INGREDIENTS

1 tbsp (15 g) butter, melted

4 tsp (20 ml) sugar

FOR BASE:

1 egg yolk

2 oz (56 g) bittersweet chocolate

3 tbsp (45 ml) butter

½ tsp (2.5 ml) vanilla extract

Large pinch of salt

Preheat oven to 400°

Brush each ramekin with the melted butter. Then place the 2 tsp of sugar in each ramekin, covering all sides. Pop in the fridge.

Melt chocolate and butter in a microwavable bowl until melted. Whisk to combine. Then add 1 egg yolk, vanilla and salt. Whisk until combined. Keep on counter at room temperature. If you need to make it more than 1 hour ahead, do so but pop in the fridge until ready to bake

.

Remove ramekins from the fridge and using a large spoon dollop the mixture into each ramekin filling all the way to the top. Smooth off with a spatula so you have a flat consistent top.

Run your thumb along inside of the ramekin, all the way around, creating a little channel around the soufflé. This will allow your soufflés to rise higher in the final baking stages and prevent tops from cracking. Then clean the edges off with a dish towel.

Place soufflés on a cookie sheet and pop in the oven. Bake for just 13-14 mins until soufflés have risen and tops are slightly browned

.

Grilled chicken Caesar.... this is a large dinner salad ....we are going back to the old days where they used to come tableside to make fresh Caesar dressing with the eggs and the anchovy to give you amazing flavors to a real Caesar salad. This will be topped with Organic grilled chicken breast and fresh crouton. Organic romaine and Artesian lettuce will bring this to life.

Spicy Scallop Linguine with Creamy Marinara and Parsley Breadcrumbs......Crushed red pepper gives the sauce its signature kick, and pairs perfectly with the buttery, naturally sweet bay scallops. Sprinkle over the parsley breadcrumbs.Yum!

Homemade organic chicken pot pie filled with delicious white meat organic chicken breast and fresh vegetables herbs and Seasonings. Pick a slaw or Salad side dish to complement this to a perfect meal!

Classic Grilled Angus Steak Dinner!  On the Big Green Egg served with baked potatoes and green beans.

OCTOBER 21ST WEEKLY MENU

SOUP OF THE WEEK

ALBONDIGAS......This is an old school Mexican soup of a nice hearty broth with carrots and green beans, Latin spices and herbs and beef meatballs with a touch of mint. It's definitely going to be a good soup for next week! I will be simmering those organic grass-fed beef bones!

Roasted organic vegetable platter........Roasted squash, heirloom baby potatoes, parmesan artichoke, baby bella mushrooms, broccoli and rainbow Swiss chard. Will be served with a fig balsamic that they can drizzle drizzle.

Teriyaki Salmon with Soba Noodles and Bok Choy.........Pan-seared salmon is dripping in a classic teriyaki sauce and paired with buckwheat noodles and crisp bok choy glazed in garlic and soy.

Grilled Chinese Pork Lettuce Wraps with Creamy Ginger Sauce.......Pork loin is maeinared with soy sauce, brown sugar, and sherry vinegar for a lighter punch, then stuffed into crisp Boston lettuce leaves with a creamy pickled ginger sauce on top.

Big Green Egg grilled thick cut Angus strip steaks with duck fat roasted baby potatoes and green bean almondine. Beautiful Angus thick-cut strip steaks with chef'special BBQ rub char grill to Perfection on the Big Green Egg.

Cavatelli with Ragu Sauce.......Cavatelli is tossed in a Hardy Angus Ragu style sauce served with garlic bread and Artesian salad

2019 Hardware Grill Fest and competition

The 2019 Hartville Hardware Grill Fest and competition! 

I will be representing the Big Green Egg this year in this grillfest.

Hartville Hardware started out as a small hardware company with their true hometown traditions and small hometown customer service and have grown into a 25000 square foot facility now and is one of the biggest Hardware companies in Ohio. They stay true to their roots so you still feel that Hometown feel when you walk in.

I have been asked to come as a celebrity chef representing the Big Green Egg in their educational tent along with world famous Pitmaster herself Diva Q!  She will be representing Traeger grills.

We both will be in the educational tent and I will be making grilled Asian Latin Style pork belly street tacos. This event is on Saturday September 21st in an all day event with samples, sales and a barbecue competition from 3 to 4 p.m. in which I will be involved in judging! 

I hope some of you can make it out to Hartville Hardware Grill Fest but I also wanted to share with you the recipe for my street tacos! 

 

Grilled Asian/Latin pork belly street tacos

For Belly....

Ingredients

1 pound skinless pork belly

BBQ Rub , I use a mix of All-purpose rub , Korean Rub and Cumin by Spiceology

Instructions

Season pork belly....Cover and refrigerate overnight.

Preheat oven to 450°F.

Roast pork belly for 30 minutes in a heat oven-safe pan or skillet, fat side up. Reduce heat to 275°F and roast for an hour or more, until tender but not mushy. (Larger pieces of pork belly will take longer. Our one-pound belly was done after an hour at 275°F.)

Remove from oven and let cool to room temperature. Wrap tightly in plastic and refrigerate until chilled through – at least a few hours and up to 2 days.

Once chilled, throw on a grill to finish smoking and crisping

Putting together the street tacos

Ingredients

8 small flour  tortillas 

sauce:

1tbsp seasoned rice vinegar

One tablespoon of mayo

2 tbsp sesame oil

One teaspoon of finely chopped garlic

One teaspoon of finely chop cilantro

One teaspoon of finely chopped Ginger

1 tablespoon sriracha

1 tablespoon fresh lime juice

2 teaspoons soy sauce

Toppings

red or green cabbage thinly sliced

fresh cilantro chopped

green onions finely chopped

jalepeno thinly sliced

1 lime cut into wedges

Warm up your petite tortillas.... slice up your pork belly and place it on the tortilla, next your toppings and drizzle your sauce.
