OCTOBER 21ST WEEKLY MENU

SOUP OF THE WEEK

ALBONDIGAS......This is an old school Mexican soup of a nice hearty broth with carrots and green beans, Latin spices and herbs and beef meatballs with a touch of mint. It's definitely going to be a good soup for next week! I will be simmering those organic grass-fed beef bones!

Roasted organic vegetable platter........Roasted squash, heirloom baby potatoes, parmesan artichoke, baby bella mushrooms, broccoli and rainbow Swiss chard. Will be served with a fig balsamic that they can drizzle drizzle.

Teriyaki Salmon with Soba Noodles and Bok Choy.........Pan-seared salmon is dripping in a classic teriyaki sauce and paired with buckwheat noodles and crisp bok choy glazed in garlic and soy.

Grilled Chinese Pork Lettuce Wraps with Creamy Ginger Sauce.......Pork loin is maeinared with soy sauce, brown sugar, and sherry vinegar for a lighter punch, then stuffed into crisp Boston lettuce leaves with a creamy pickled ginger sauce on top.

Big Green Egg grilled thick cut Angus strip steaks with duck fat roasted baby potatoes and green bean almondine. Beautiful Angus thick-cut strip steaks with chef'special BBQ rub char grill to Perfection on the Big Green Egg.

Cavatelli with Ragu Sauce.......Cavatelli is tossed in a Hardy Angus Ragu style sauce served with garlic bread and Artesian salad

 

 

SIMPLE CLEAN EATING

You now have the power to pick and choose your heart's desire for simple healthy eating.

If you need to stay away from butter( I only use kerrygold)  simply pick olive oils, avocado, coconut or grapeseed and   fat-free paleo and keto friendly duck fat spray 

Just like the regular menu all vegetables, carbs and proteins will be organic and farm-raised and hand- selected

Simply pick one protein

Simply pick one vegetable and One Carb but you also have the option of getting double vegetable and no carb or viceversa.

Then pick how you would like it prepared or you can just have me pick your preparations and Seasonings.

As you notice I am no longer giving you the list of meats fruits and vegetables because the list is so large oh, you can pick your heart's desire, if you do pick something like a lobster or other more expensive items I will let you know of the upcharge.

" I would like to do chicken, steak and turkey this week and you pick the rest and how you want to do it!"

 

Delivery days are Monday, Tuesday, Wednesday and Thursday. Arrangements must be made for delivery for food will not be left outside . Deliveries are made between 11 a.m. and 3 p.m..

Orders are Due FRIDAY BY NOON 

Each choice $60 which serves up to 3 and you can pick as many menu items as you wish!

Email me your choices and a secured invoice will be sent to you that you can put in your address information. You can also pay by cashapp or venmo.

There is a 25% service fee added to every total. (30%  for anything past  the area of Chagrin Boulevard this includes Medina  /Cleveland)  are given with every delivery with heating instructions  via email or print (sometimes my printer does not cooperate  LOL ) After regular ordering of at least 3 different times a one time yearly $50 fee for containers will apply.

All containers are to be returned each week washed Or charges may occur

Homemade chicken and dumplings.... homemade chicken bone broth seasoned with fresh herbs, fresh peas and carrots with fluffy buttermilk dumplings. 

Clambake! This will stay on the menu through the fall to order whenever you'd like. The cost is $60 per person. You will receive a dozen steamed clams, brothy clam chowder,  cole slaw, corn on the cob, roasted baby potatoes, grilled bratwurst, grilled chicken thigh, roll and butter. ADD A LOBSTER TAIL FOR $10

Grilled strip steak served with green beans or asparagus, roasted baby potatoes or smashed and grilled sweet potatoes

Sweet and Smoky grilled sockeye salmon served with scallion and charred asparagus basmati rice, sauteed organic baby bella mushrooms

Grilled chicken caesar salad. Buttermilk marinated grilled chicken served on top of organic romaine lettuce fresh shaved Parmesan and garlic butter croutons.

Roasted vegetarian plate.... roasted acorn squash, carrots, heirloom baby potatoes, baby bella mushrooms and broccoli served with white balsamic glaze.

Bone broth beef pho!

One of my favorite soups because of all the goodies that are in this that you put together! Broth is simmered with fresh lemongrass and Ginger with a touch of soy and sesame, and then we have noodles, kimchi, soft poached farm fresh egg, fresh chopped scallions, marinated sirloin tip, fresh lime and fresh cilantro

Organic chicken piccata

Chicken piccata is a classic Italian dish, always served with a silky pan sauce of white wine, butter, and parsley, plus capers. Served with duck fat roasted heirloom potatoes and long beans

Cavatappi alla Norma with Roasted Eggplant and Whipped Ricotta

Alla norma is a style of pasta sauce native to the Italian island of Sicily. Slow-roasted eggplant is folded into a tomato sauce with onion, garlic, and basil. It’s tossed with corkscrew-shaped cavatappi noodles...creamy whipped ricotta is dolloped overtop

Pork tenderloin Wellington

Seasoned pork tenderloin encased in puff pastry and sauteed greens. Served with whipped horseradish sweet potato. Wellington will be par-baked for you to complete at home so you get the crispy outer shell right before serving!

2019 Hardware Grill Fest and competition

The 2019 Hartville Hardware Grill Fest and competition! 

I will be representing the Big Green Egg this year in this grillfest.

Hartville Hardware started out as a small hardware company with their true hometown traditions and small hometown customer service and have grown into a 25000 square foot facility now and is one of the biggest Hardware companies in Ohio. They stay true to their roots so you still feel that Hometown feel when you walk in.

I have been asked to come as a celebrity chef representing the Big Green Egg in their educational tent along with world famous Pitmaster herself Diva Q!  She will be representing Traeger grills.

We both will be in the educational tent and I will be making grilled Asian Latin Style pork belly street tacos. This event is on Saturday September 21st in an all day event with samples, sales and a barbecue competition from 3 to 4 p.m. in which I will be involved in judging! 

I hope some of you can make it out to Hartville Hardware Grill Fest but I also wanted to share with you the recipe for my street tacos! 

 

Grilled Asian/Latin pork belly street tacos

For Belly....

Ingredients

1 pound skinless pork belly

BBQ Rub , I use a mix of All-purpose rub , Korean Rub and Cumin by Spiceology

Instructions

Season pork belly....Cover and refrigerate overnight.

Preheat oven to 450Β°F.

Roast pork belly for 30 minutes in a heat oven-safe pan or skillet, fat side up. Reduce heat to 275Β°F and roast for an hour or more, until tender but not mushy. (Larger pieces of pork belly will take longer. Our one-pound belly was done after an hour at 275Β°F.)

Remove from oven and let cool to room temperature. Wrap tightly in plastic and refrigerate until chilled through – at least a few hours and up to 2 days.

Once chilled, throw on a grill to finish smoking and crisping

Putting together the street tacos

Ingredients

8 small flour  tortillas 

sauce:

1tbsp seasoned rice vinegar

One tablespoon of mayo

2 tbsp sesame oil

One teaspoon of finely chopped garlic

One teaspoon of finely chop cilantro

One teaspoon of finely chopped Ginger

1 tablespoon sriracha

1 tablespoon fresh lime juice

2 teaspoons soy sauce

Toppings

red or green cabbage thinly sliced

fresh cilantro chopped

green onions finely chopped

jalepeno thinly sliced

1 lime cut into wedges

Warm up your petite tortillas.... slice up your pork belly and place it on the tortilla, next your toppings and drizzle your sauce.

Soup of the week....

Roasted chicken and vegetables with wild rice.

The soup is a meal in itself! All soups are made from scratch no bouillon, or premix has will be ever used. Fresh bone broth and stock only will be used.

Roasted Cornish game hen served with white balsamic brussel sprout salad and roasted baby potatoes

Barbecued Steak , Chicken or Shrimp kabobs served with seasoned basmati rice , homemade purple cabbage slaw

Sauteed chicken cordon bleu, organic chicken stuffed with Swiss cheese and ham off the bone rolled and sauteed served with a creamy Parmesan sauce. Serve with roasted vegetable medley

Grilled steak plate... dry rub and kerrygold butter marinated then grilled medium-rare so you can finish it at home. Served with baked potato or baked sweet potato and green beans

 

 

Delivery days are Monday, Tuesday, Wednesday and Thursday. Arrangements must be made for delivery for food will not be left outside . Deliveries are made between 11 a.m. and 3 p.m..

Your own branding, your own marketing, your own photographer, the driver, the orderer, the menu writer, The Shopper, The Advertiser and the chef and a lot of the times the sous-chef, the dishwasher, the manager, the general manager and the server. My day started around 5:40 a.m. it is now 5:49 p.m. and I still have 3 to 4 hours yet in my day. I do this  5  to 6  out of my 7 days .  And some are longer if I have fine dining events. You may think... Jesus Christ that's a lot of shit. If you think that at all ?

This is not the job for you.

I have much much pride in what I do and I don't wake up thinking I have a job I wake up thinking of the love and compassion that I can put in all my dishes weekly and when it comes to fine dining or events it's like a first date each time. If you don't feel this way?

This is not the job for you.

I build relationships with my clients and to me they are my extended family.

Everyday is learning not because I have to learn but because I want to learn. The only thing in my vocabulary is I want, I want, I want and how do I get it. I started my business in 2006 and had quite a few disappointments and downfalls to the point where I didn't know if this was for me, but instead of thinking is this for me, I thought I love this I'm going to make this work, I want to bring my love and passion into people's lives because I know I'm different.

That my dear friends IS indeed the difference. Believing in yourself is a main factor and if you don't have the strength and passion and drive...

Medication has its value, but if you could choose food over modern medicine, wouldn’t you? Think of it this way: food is medicine. Food is nature’s medicineβ€”without any side effects. Of course, there are other factors that add up to good health, such as good sleep, managing stress, and exercise, but diet is the foundation upon which you can build and is something you can usually control.

This is why I have added the #cleansimpleeating menu to the weekly dinner deliveries. The regular menu will still be posted each week but this menu will always stay the same each week with many options and preparations for you to choose from.

I am already using organic fruits and produce locally harvested when I can and I only use farm fresh meats non-antibiotic raised by Farmers on small farms to support the hard working farming community.

Everything I shop for I shop personally to ensure quality to my consumers.

Organic Raw cold pressed avocado oil, coconut oils, grapeseed oils and olive oils are used which provides great health benefits themselves along with the best fresh seasonings and spices. Fresh Cracked Pepper and sea salts will be used no table salts will ever be used.

Never will I do any added sugars only natural occurring. Unless requested I will stay away from dairy products and butter.

My prep will ensure full flavors for this style of eating because why shouldn't you have the full benefits of flavors just because you're eating simply.

Menu will always be with the regular menu it will never change the only thing I may add different seasonal vegetables or different Meats when I run across them.

Waldorf Chicken Salad with Creamy Poppy Seed Dressing.........Waldorf salad is a longtime American classic combining apples, celery, grapes, and walnuts then add slices of pan-roasted chicken. An addictive dressing of sour cream, Dijon mustard, poppy seeds, honey, and lemon juice ties everything together.

Braised Pork and Apples , French beans and Herbed Sourdough Croutons....white wine pan sauce with Gala apple, tender onions, sage, and thyme.

Vegetarian Poutine with Caramelized Onion and Mushroom Gravy......lightened version features oven-baked fries smothered in an intensely savory onion and mushroom gravy with pieces of melty cheese curd on top. A crunchy arugula and radish salad balances the richness

Homemade chicken pot pie.....gravy from bone broth made from the chickens that I get from Contraban Farms Ltd ... remove the meat that goes into the chicken pot pie.... then the rest of the chicken slowly simmers to make the most beautiful stock to make this beautiful gravy so you get the best flavors possible.. to balance this out it is served with a beautiful wild green salad

What does this mean? 
The same beautiful meats and produce.
But dinner will be cooked with lower sodium and herbal seasonings, Olive, avocado or coconut oils. Full of flavor just not so heavy for your special needs.
For example grilled steak served with asparagus and roasted potatoes or maybe you do not want starch so you can get double vegetables! 
Meals will  be full of flavor unlike Frozen or delivery meals that just kind of taste blah. Just because you have to eat a little different doesn't mean you don't deserve full flavors and good food!

savory-sweet, Vietnamese-inspired sauce in this recipe. Half the blend of soy, brown sugar, Worcestershire, and lime is used to marinate chicken breasts, while the remainder is mixed with Thai chile as a flavorful dressing for the finished chicken and crunchy veggies.
