Recipe Thyme!

Rigatoni in a cream sauce with fresh tomato spinach and capers with parmesan. Served with Grilled Steak.

1 lb rigatoni

6 Whole garlic cloves , chopped

2 cups baby spinach

1/2 cup of Parmesan cheese

Two packages of cherry tomatoes

Chopped fresh Parsley, Sage , Thyme and Rosemary to equal 1/2 cup... With parsley being 80% of the herbs

2 cups of vegetable stock

One cup of red dry wine

One cup heavy cream

1/4 cup capers ... Empty This amount in a bowl and fill with water to rinse and let it sit until you're ready to use So you take some of that vinegar out of the capers.

4 tablespoons of butter

2/3 lbs skirt steak Seasoned with B&B Infinity rub.

B&B charcoal For grilling

First thing is to season your steak And set aside To make your sauce.

The second thing you're going to do is put your butter in a pan on Medium-high heat

Next throw in your garlic and tomatoes at the same time. Saute everything for approximately 10 minutes Stirring because you do not want your garlic to burn and stick to the bottom.

Next Throw-in that dry red wine to deglaze.

Let this Boil For about 8 to 10 minutes...

Cook out the alcohol

Now throw in your vegetable broth And simmer for another 10 to 15 minutes...stir stir stir!

Stirring is key in this recipe.

Turn the heat down on low And let it cook for an additional 5 to 8 minutes.

Now throw in all of your chopped herbs , And drain the Capers out of the water and put that in as well.

Deer that up and now slowly and I mean slowly Drizzle your heavy cream while stirring Until fully Incorporated in the sauce.

Turn this up to a medium Heat And let it simmer for about 15 minutes to thicken And shut it down. After you shut off your sauce throwing that spinach Give it a stir and leave it alone let the spinach Wilt inside of your sauce do not do this while cooking Or else you over cook your spinach.

Now let's Grill.

Get a nice hot fire and slap that meat right on the grill and cook it to the temperature you like. I myself Like medium to medium rare Depending on the cut of the steak.

Bring your steak in And let it sit for just a second before you slice it

Boil a pan of water to cook your pasta , Drain your pasta Place on a plate And ladle your sauce Over the top . You may need to reheat your sauce a little bit Before you do this .

Now Go and slice your skirt steak against the grain and place the steak on top of your pasta and lastly finish with grated Parmesan and hot pepper seeds if you like a little spice!
