Tapa's consists of multi courses but smaller plates you can get the most flavors out of every plate instead of everything being on one.
Each Tapas plate ingredient owns the dish. The main focus is the one main item.
I love exploring different nationalities so menu options are endless for each and every client that comes to me without having to be stuck with a set menu which brings us to this dinner I did on Saturday.
This dinner was completely a Greek Tapas theme
I wanted to be very traditional with the dishes while enhancing the dishes with a modern twist...

AVGOLOMO SOUP SHOT
traditional Greek lemon chicken soup with whole egg and basmati rice
grape leaves stuffed with arborio rice with golden raisins and tzatziki sauce
olives in chili infused evoo
citrus with lemon white basalmic, evoo powder, allepo pepper
GRILLED HALLOUMI SALAD
arugula, roasted pistachios, crystallized fennel, fig balsamic, evoo
roasted eggplant mousse, lemon balsamic
braised humanely raised antibiotic-free short rib slow-roasted with red wine, yellow and red cherry tomato , served with favabeans with black garlic and chanterelle mushroom. goat cheese and herb skillet gnocchi ( gluten-free variation will be cauliflower pasta)
local honey infused ice cream with homemade baklava ( gluten-free variation is gluten free donut with honey and roasted pistachio)
